Chicken & Broccoli Casserole

Casseroles get a bad rap. It’s such a shame, because they are a great meal option for the whole family. Most are easy to prepare, freeze and reheat well, and are pretty  portable. This recipe is one of our all-time favorites. I’ve seriously made this more times than I can count. It’s so simple and yummy. The kind of meal that gets addicting and you end up craving on random Tuesday nights. If you made a resolution to cook more at home this year, I would definitely recommend adding this one to your repertoire.  It’s cheesy and homey without being too heavy. It’s also a one-stop-shop for veggie, protein, and carb. Win for mom and fam!

Homestyle Chicken Noodle Soup

Happy New Year friends! I hope you all got in some much deserved R&R over the holidays. We had a great time with our families, but are happy to be home and back in the swing of things. A good handful of my friends seemed to have come down with a cold in recent days (no doubt all that holiday travel and stress has left us all a little susceptible to the cold and germs), so I thought I would share my recipe for chicken noodle soup. I’m not the biggest fan of chicken broth, so my version combines vegetable and chicken stock to give it a slightly different flavor. It’s really delicious, and super easy. If you have an extra Parmesan rind lying around (I freeze mine) be sure to throw it in, it does amazing things flavor wise! Honey Plum Soy Chicken

When I first met my husband, the only things he had in his fridge were beer, ketchup, and a large bottle of soy sauce. I’m sure he wasn’t the only bachelor to live this way, but I would like to think his culinary requirements have expanded since marrying me. Although we try and stay away from super salty dishes, I couldn’t resist trying this knowing that Brad would absolutely love it. I mean the recipe calls for an entire bottle of soy sauce. It practically had his name written on it, and I do aim to please every once in a while. I did knock the soy sauce down to about half (I just couldn’t bring myself to do the whole thing), and I can’t imagine it could have been more delicious. An easy and elegant meal for the soy sauce lover in your life.

African Drumsticks

There’s something about marinating meat that gets me excited. It’s such an easy way to impart a lot of flavor, and usually you can do the majority of the work in advance. It’s so nice to know that all I have left to do for dinner is to pop it in the oven. Like most New Yorkers, we are sorely lacking a grill (yet another thing that tops my “dreams of suburbia” list), so this is a great replacement recipe for when you would normally do bbq chicken. The flavor penetrates all the way through the meat, but isn’t overpowering, making this recipe pretty fool-proof for most palates (including children). The meat is also super tender, practically falling off the bone. You could easily set the chicken under the broiler for the last few minutes to give the skin a few charred bits if that’s more your speed as well. I served it with some fresh heirloom tomatoes and corn. A simple and fresh tasting summer dinner. Hope you enjoy!

African Drumsticks

Adapted from Nigella Kitchen

1/3 cup Worcestershire sauce
1/4 cup ketchup
2 tsp. English mustard
1 tsp ground ginger
1 T apricot jam
1 onion, peeled and finely chopped
8-10 chicken drumsticks
1 T garlic flavored oil

  • Mix together Worcestershire sauce, ketchup, mustard, ground ginger, apricot jam, and chopped onion.
  • Add chicken and marinade overnight in the refrigerator.
  • Put oil in a rimmed baking sheet, and tilt so that the oil covers the pan.
  • Arrange chicken snugly in pan then top with any remaining marinade.
  • Cook for 45 minutes – 1 hour, turning at least once.

Chicken Cordon Bleu Pasta

Craving something cheesy, salty and carb-coma inducing? Well, look no further! This dish is like restaurant style mac and cheese taken to the extreme. It has pretty much anything you could ask for at the end of a long day – bacon, cheese, pasta, ham and even a little chicken for good measure. You will eat it, your kids will eat it, then you’ll all eat it again for lunch the next day because it’s just darn addicting (isn’t all mac & cheese?).

Chicken Cordon Bleu Pasta

12 oz penne pasta, cooked
2 cups heavy cream
8 oz cream cheese
1/2 tsp onion salt
1/2 tsp garlic powder
1 1/2 cup shredded swiss cheese (separated)
3 chicken cutlets, cooked & cubed
4 strips bacon, cooked & crumbled
1/2 cup ham, diced
bread crumbs

  • Preheat oven to 350 degrees F.
  • Over medium low, heat cream cheese until melted, then stir in heavy cream, onion salt and garlic powder. Adjust seasoning to taste.
  • Stir in 1 cup cheese until melted and smooth.
  • In a 9×13 in. baking dish, combine pasta, cheese sauce, chicken, bacon and ham. Top with remaining cheese and breadcrumbs.
  • Bake for 15 minutes, until hot and cheese has melted.
